What makes hospitality payroll different
- Churn economics. With staff turnover often above 70 percent a year, per-starter fees and P45 processing dominate costs. Cap or eliminate them in the contract.
- Tips and tronc. Covered in depth on our restaurants and pubs pages: fair allocation is now law, and NI-free distribution needs an independent tronc.
- Irregular-hours holiday. Rolled-up holiday pay (12.07 percent on each payslip) is lawful again for irregular-hours workers – simpler, but it must be itemised separately.
- Minimum wage exposure. Uniform costs, training deductions and unpaid time can all breach the floor; the NMW checker has the 2026/27 rates.
